Who wants a slice of very italian pizza?

Neapolitan Pizza

A slice of homemade pizza on the base of italian recipe? Sounds good! The very tasty pizza is the neapolitan one, with real buffalo's mozzarella and sauce of S. Marzano tomatoes quality. Someone says it is better to use sparkling water, other one says is better warm water, i prefer still water at room temperature, but you can do like you want.



Take 500g of flour, 25g of yeast and dissove it into a cup of warm water. Add it on flour and mix together with other water until the dough is compact and smooth. Cover and let rise for two hours. Meanwhile cook the tomatos sauce and diced mozzarella.

Now take a piece of dought (200g about) and roll it with your hands to create a thin round. Spread the sauce over the circle of dough with a spoon (one spoon of sauce is enough), add a few leaves of basil, a little olive oil and bake 240°. A wood stove would be better, but if you have a convection oven is the same thing, if haven't i can suggest to put into the oven a glass of water and the result will be good!
