Caprese cake for your birthday

Caprice Cake

It's your birthday or a special occasion? Do you want to make a cake and don't know which one? I suggest you Torta Caprese. It's a very delicious italian cake that takes its origins in Caprice island and has become one of the best national cakes. It 'a sweet rather complicated, with most calorics ingredients, but has a unic taste. Now i'm proposing you the traditional recipe, with dark cioccolate, but sometimes make even the special version with withe cioccolate. Let's start by getting indredients first:
Ingredients

  • 200g butter
  • 250g plain cioccolate
  • 200g chopped almonds
  • 250g sugar
  • 4 eggs
  • powdered sugar
Melt the cioccolate in microwave oven or in a water bath and make soften butter.  
Break the eggs, separating the whites from yolks. Put the yolks in a bowl, add sugar and work it with the help of mixer (until their color will appears fair), now whip the albumen with mixer.
Add diced butter in the cream of yolks and sugar and whip with mixer again. When will be amalgamated add melted cioccolate and chopped almonds. Amalgamate all gently adding albumen. Continue to amalgamate trying to incorporate albumen starting from the bottom to top. Line the cake pan with nonstick paper (or with a little bit of butter) and bake it on 140° for 50 minutes.

When cooked  add powdered sugar in top and you Caprice cake is ready to be served. If you want to try the withe version you have to use white cioccolate and lemon zest. This variant has a more delicate 
taste, is a little bit different form the original but is very good too.

For a touch of style you can make singlular portions of Caprice cake using molds for muffins and this is the result
