How to cook lighter without sacrificing taste: Stuffed Eggplants (melanzane ripiene)


My Stuffed Eggplants

Here comes the summer and bikini too, are you afraid for your fitness? Calm, it's not too late, all you have to do is reduce food portions, expecially carbohydrates, do jogging (just half an hour a day) and drink so much water. I know that cooking something light is not easy and requires a lot of imagination to get something tasty and it is here I come to your rescue with a recipe practice, light and delicious...Trust me! Well, this is my personal recipe of stuffed eggplant, let's go start...

Ingredients (4 people):
  • 2 eggplants
  • 4 slices of bread
  • 4 slices of speck (diced/ tagliate a cubetti)
  • Basil
  • 2 cloves garlic
  • black pepper
  • salt
  • olive oil
  • 4 little tomatoes
  • Bread crumbs
Preparation:
Clean and cut in half the eggplants, at this point remove the inside, the white soft one leaving 1 cm form the edge (a guise of a little boat), like you may see in this picture:

Do the same thing with the other eggplant and then diced the white inside. Take the slices of bread and soaking them in water. In a frying pan put a little oil, garlic and tomatoes until they will be softened. Add now diced speck, eggplants's inside and bread sponged (crumble it with hands). Let cook and mix to prevent sticking and add warm water if necessary. Little before the end of cooking add basil, salt and balck pepper, so mix again and turn off the burner.

Cooked Stuffing
 Now take one half of eggplant and fill it inside whit the stuffing just prepared (if you want you can whip the stuffing before, I do it on, like you will see by my pictures). Do the seme thing for the others halves and arrange all in a large baking dishCover with bread crumbs, add alittle olive oil and bake at 200° until the edges of the eggplants are cooked.

Single portion is composed by:
An half eggplant, a slice of speck, a slice of bread, little of oil, little of salt and one tomato. Carbohydrates, proteins and fat are balanced and with few calories. Taste this dish and tell me if is not light and tasty

A touch of style:
 To give a final touch of style you can add above flakes of parmesan cheese and some basil, so it will be light, so good and so fashion...... : )
